Yogurt Bran Muffins

This is one of my favorite muffin recipes. The base recipe is from Betty Crocker.

Yogurt Bran Muffins (makes 12)
1 Cup original Fiber One or All Bran cereal
1 egg (beaten)
1 1/2 Cups plain or vanilla yogurt
1 1/2 Cups all purpose flour
1/3 Cup brown sugar (packed)
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 Cup blueberries

1. Preheat oven to 400 degrees F. Add paper liners to muffin tin.
2. Pulverize bran cereal in a food processor, or put in a plastic bag and use a rolling pin to crush. I like the pieces to be very fine.
3. Stir egg, oil and yogurt in a medium bowl.
4. In a separate bowl mix dry ingredients together. Add to wet ingredients and stir until just moistened.
5. Stir in berries.
6. Fill each muffin cup 3/4 full and bake for 18-20 minutes, or until toothpick in the center comes out clean.

You can substitute any type of berry for the blueberries. My son doesn't like any "chunks" in his muffins. He'll eat rock solid frozen blueberries, but add them to a muffin and forget it! If I don't want to have to pick out berries all breakfast long, I just make a few plain for him. I've also substituted raisins and dried fruit for the berries and they've turned out well.

First Post!

Hi Friends! I've been trying to keep up to date with nutrition since I've started staying at home with my son, but I really wanted a place to be able to share the information I'm gathering. A blog seems to be a good answer.
